We cultivate our own yeast. We call her Bertha.
She is treated with tender loving care because
she gives our bread its unique sourdough flavour.
From the slight sweetness of the caramelized
crust to the light full flavoured interior, Sourdough
makes great eating, and because it is all natural,
sourdough bread stays fresh much longer
than bread made with commercialized yeast.
Sourdough bread also takes much longer
to make – our walnut bread, for example, takes
more than 36 hours. The slow proofing process
allows the bread to develop an intense,
deep flavour
